Sometimes, shrimp is just the right thing to do.
I can love me up some shrimp more often that I care to admit. I try not to think about the bad stuff and really just allow myself to enjoy it once in a while. Here is one of my most favorite ways to love me up some of these little treasures…
Tamari-Cilantro Marinated Shrimp
- 2#’s peeled and deveined shrimp (TJ’s has a great frozen one)
- 1/2 cup tamari (or low sodium soy sauce)
- handful of chopped cilantro
- juice & zest of 1 lemon or lime
- 1 cup water
- 1 minced green onion.
Let all of this lucious-ness marinate together for at least two hours (or overnight) in the refrigerator. When ready to cook, heat a large skillet with 2 tbls coconut oil and add the drained shrimp. Cook for about 4-5 minutes, until shrimp are opaque. Serve over rice. You can reserve the sauce and reduce it in a separate pan. You may need to adjust the seasoning.
