This simple, quick & delicious dish hits our table at least once a month. You can find crumbled goat cheese in any good cheese section of most markets and it’s critical to use fresh, large peeled shrimp. I serve this over rice, pasta or polenta. All of these ways have proven delicious!
Shrimp with Tomato & Goat Cheese
- 4 roma tomatoes – chopped small
- 2 garlic cloves – minced
- 2 tbls Bonnie’s Tasty Herb Rub
- 1 cup crumbled Goat Cheese (or Feta)
- 10-15 large cleaned & deveined shrimp
- salt & pepper to taste
Pre-Heat oven to 350 degrees. Layer the tomatoes, garlic, Bonnie’s Tasty Herb Rub, salt & pepper in a large casserole dish or baking dish. Lay shrimp on top and sprinkle with crumbled goat or feta cheese. Bake covered with foil for 15 minutes. Uncover and bake for an additional five minutes or until shrimp are just done (when they are pink). Try not to overcook the shrimp! Remember they will continue to cook even after you have removed them from the oven. Adjust seasoning if necessary.
Serve over rice, pasta or polenta!
