- Two large heirloom tomatoes
- 1/3 of a red onion
- 1 tsp of olive oil
- Handful of Cilantro
- Salt and Pepper to taste
- Chop the tomatoes into small cubes then add to medium sized bowl.
- Dice the onion and finely chop the cilantro.
- Add the onions and cilantro to the bowl.
- Add 1 tsp of olive oil and mix the ingredients until it is spread evenly throughout.
- Add salt and pepper to taste.
