Recently, I have become a tiny bit obsessed with eating Paleo. Though I know for an absolute fact that I could never eat a 100% Paleo diet, I love the way it makes me feel when I really follow the guidelines for a few days.
What is Paleo?
In an effort to get this post out before I’m old and gray (cue the jokes), I am going to refer you to a great explanation of Paleo that’s already published. Click on Nerd Fitness and he will give you the “dummies” version of Paleo (aka The Caveman Diet) and a lot of really great information. In the meantime, make a loaf of this really yummy Paleo friendly bread. It’s also Gluten Free!
You will need:
- 1/2 cup walnuts
- 4 medjool dates or dried prunes
- 3 eggs
- 1 cup coconut flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/3 cup coconut oil (melted)
- 1/3 cup honey
- 1 1/2 cup grated zucchini
- 2 stevia packets
- 1/3 cup whipped cream cheese
- pinch of salt
Preheat oven to 350 degrees
Place walnuts and dates in a food processor and pulse a few times (like 4 times) and then transfer them to a mixing bowl.
Add the flour, cinnamon and baking soda to the walnut mixture and mix well, breaking up any lumps.
Add coconut oil and honey and mix as well as you can.
Add the eggs and mix again.
Stir in the grated zucchini.
Line a small loaf pan with parchment paper and put mixture in.
Bake in the oven for about 40 mins until brown and feels done on top. It will firm up the more it cools. Use a serrated knife to cut the bread and cut in a sawing motion slowly. This “bread” is delicious toasted!
