Why do I call this “Malibu” Chimichurri? Because it’s a relaxed, easy & organic way to spice up veggies, grilled meats & sandwiches. Originally, Chimichurri’s delicious flavors came from Argentina. Now, almost every country has their own version. Some add chili flakes, others add vinegar. I add Bonnie’s Tasty Herb Rub and of course, love.
Five ingredients, 10 seconds in a Vitamix or blender and hours of mind blowing flavor.
- 1 large bunch of flat leaf parsley – stems removed
- 5 garlic cloves – you can throw them in the Vitamix with the paper skins!
- 1 tsp Bonnie’s Tasty Herb Rub
- 1 cup olive oil
- salt to taste – about 2 tsp
Whirl away for about 45 seconds. Add oil if needed and adjust the salt. Store in a mason jar for up to two weeks or give it to a really, really lucky friend.
