My all time favorite thing to make a few times a month. This is the granola you will use to make the parfaits, that your family will LOVE! Serve this granola alone or on top of ice cream (after dinner of course) or with your favorite fruit or yogurt.
4 cups quick cook gluten free oats (or regular oats)
3/4 cup raw sunflower seeds
2 cups crushed macadamia nuts – unsalted (or ANY nut!!)
1 cup Crushed Walnuts
1 1/2 cup shredded coconut (sweetened or not)
1 1/2 dried cranberries
zest of 1 orange
3 tbls of choked candied ginger
3/4 cup raw honey
1/4 cup coconut oil
Pre-heat oven to 350 degrees
Combine top eight ingredients in a large bowl. Heat up the honey & coconut oil together until liquid. Pour over mixture and toss to evenly coat.
Spread mixture on one or two cookie sheets and toast in oven for 10 minute intervals, stirring after each ten minutes. Toast for a total of 30-40 minutes, depending on how toasted you like your granola. Let mixture cool and store in an airtight container for up to 10 days.
