There is nothing like a steaming hot pot of soup on a rainy day. So…tonight I made a batch of quick Tomato Basil Soup, becasue I had everything in my pantry, I was done (yes, ready to eat) in 20 minutes. Here is what you add to a large soup pot…
- 3 tbls olive oil
- 2 crushed garlic cloves
- 2 chopped carrots
- 1/2 chopped yellow onion
- 2 large cans crushed tomatoes
- 1 tbls Bonnie’s Tasty Herb Blend
- salt & pepper to taste
- add 1 cup chopped basil once blended
Simply cook all of these things together until you smell a wonderful aroma, about 12 minutes, then whirl it with a hand blender or carefully pour it into a vita mix or blender.
Adjust your seasonings to suit your taste and serve with fresh french baguette.
If you need to add water, do so 1/2 cup at a time and adjust your seasoning! You can also top it off with some grated parmesan…
