Don’t be fooled by this complicated looking salad.
It’s easy and delicious and best served with my Shrimp Stuffed Pasilla Chili’s!
Corn & Black Bean Salad
In a large bowl, combine the following. Refrigerate for one hour and serve either chilled or at room temp.
- 1 bag frozen organic corn (If you want to, “roast” the corn in a pan with olive oil first)
- 1 can black beans (drained)
- 1 green onion – chopped fine
- 1 bunch basil – chopped fine
- 3 tbls olive oil
- 1 tbls Bonnie’s Exotic Seaside Blend
- salt & pepper to taste
