You do not need to add any shredded cheese at all, it’s still delicious, but if you want to go crazy, then instead of shredded cheddar, you can substitute Goat Cheese or Feta as well!
Cheesy Broccoli, Potato & Peas
- 2 tbls Coconut oil (or Olive Oil)
- 2 cups left over potato (cooked) – cubed or diced
- 1 head broccoli – chopped rough
- 1 cup green peas
- 1 tbls butter or smart balance
- 1 clove garlic – chopped
- 1/4 red onion (or yellow) – diced small
source url Add all of the ingredients to a large skillet – with enough room to turn everything over with a big spoon. Let the vegetables brown a bit, because you will de-glaze the pan in a minute with some water. Cook until everything is hot and getting a bit crispy. Add more oil if you need to.

Transfer to a serving dish – unless, like at our house, your pan IS your serving dish and serve up warm. You can also let this cool and warm it in the oven for a few minutes within the next 24 hours!
