This smooth soup is a must for those with a cold. Packed full of vitamins and minerals, it’s an easy one to get down the kids…especially when they can top it with croutons and parmesan.
You will need:
- 12 large carrots cut into 2 inch pieces
- 2 large potatoes – peeled and cut into large pieces
- 1 garlic clove
- 2 tbls Bonnie’s Tasty herb Rub
- 2 tbls olive oil
- enough water to cover the veggies while they cook
I like a bit of roasted flavor, so I place everything (but the water) into a large dutch oven and turn up the flame. Once a few carrots and potatoes have begun to brown, I add the water and turn the heat to medium. Cook until the carrots are tender, about 20 minutes.
At this point, you can either use a VitaMix or a hand blender to smooth the soup out. I like a super smooth soup, so I opt for the VitaMix. Be careful, it’s hot and a bit tricky to transfer back and forth.
Once the soup is smooth you can add salt and pepper to your liking.
This delicious and nutritious soup keeps in the freezer for months as well, so make a big batch!
