Never mind dinner tonight…let’s prep dinner for tomorrow night instead !
One thing off of your list!
- 4 large boneless chicken breasts (yes, I bake them with the skins on)
- 3 tbls Bonnie’s Tasty Herb Rub (or sage, thyme & oregano)
- 1 lemon cut into large pieces (juice it over the chicken first!)
- 6 cloves garlic – crushed
- 2 sprigs rosemary
- olive oil to coat
- salt & pepper
Zip it up and roll everything around to coat the chicken. Put it in the fridge over night.
When ready to bake…Pre-Heat oven to 350 degrees.
Place the chicken breasts (and anything else that falls out!) onto a foil or parchment paper lined sheet pan. Bake, skin side up, for 35-40 minutes, until chicken is cooked to 165 degrees (yes, use a thermometer!). The biggest mistake when cooking chicken is overcooking it. It can turn a fabulous idea into a chewy dry mess. Using your thermometer will make you a better cook! You can turn the broiler on for the last two minutes if the skin did not brown enough for you.
Serve with some cous cous or left over rice and a green salad.
